The simple combination of beans, flour, eggs, and seasonings gradually became one of the most beloved recipes in the country.

Traditional Minas Gerais Feijão Tropeiro Recipe
Servings: serves 4 people
Preparation time: approximately 40 minutes
Ingredients:
- 2 cups cooked beans (preferably carioca beans)
- 4 eggs
- 1 cup cassava flour
- 1 chopped onion
- 2 cloves of garlic, chopped
- 100g chopped bacon
- 1 sliced calabresa sausage (optional)
- Salt and pepper to taste
- Fresh herbs (parsley and green onions) to taste
Method:
- In a large skillet, fry the bacon until golden and the fat is released.
- Add the sausage, if using, and cook for a few minutes.
- Add the onion and garlic, sautéing until golden.
- Stir in the drained cooked beans and season with salt and pepper.
- Crack the eggs directly into the skillet and stir until they are cooked.
- Gradually add the cassava flour, mixing until you reach the desired texture (moister or drier).
- Finish with fresh herbs and serve hot.
