Traditional Minas Gerais Galinhada Recipe

Ingredients:

  • 1 chicken cut into pieces (or drumsticks and thighs)
  • 2 cups of rice
  • 1 chopped onion
  • 2 cloves of garlic, chopped
  • 1 ripe tomato, chopped
  • 1 bell pepper (optional)
  • Turmeric or saffron (for color)
  • Salt and pepper to taste
  • Fresh herbs (parsley and green onions)
  • Oil or olive oil for sautéing
  • Hot water (for cooking)

Method:

  1. Season the chicken with salt, pepper, and a little garlic.
  2. In a large pot, brown the chicken until well golden.
  3. Add the onion, tomato, and bell pepper, and sauté until a rustic sauce forms.
